Beer Influenced Recipes For St Patty’s Day

I’m only about a half Irish, but St Patty’s Day is one of my favorite holidays. These days I tend to stay in and avoid amateur night at the Irish bars, but I’ll still break out my Dropkick Murphy’s and maybe even take it old school and find some Clancy Brothers on Pandora. Of course, I’ll drink a few Irish or Irish style beers. However, I’ll also use some of those of those beers to cook with and even bake! Yes, I’m getting all Suzy homemaker.

I always do a Guinness corned beef and cabbage. The only change modification that I’ll make, is adding a cup of brown sugar like a spice rub before I add the beer. It promises to be delicious.

This year, I’m also trying Guinness chocolate cookies for dessert.

  1. I made up some  Guinness Chipotle Chili, Mike. Gave the pork 3 days to marinate in Guinness with sea salt, cumin & a few other spices((Wed. to Fri.). Added a few splashes of a local stout for the chocolate malt character-wanted a bit of a Mole quality(Brooklyn Black Chocolate Stout would be a Great U.S. substitution). Used a sliced jalapeno & a couple canned chipotles with a few teaspoons of their adobo sauce. The other chocolate  addition was a small piece of some great stone ground chocolate with chipotle-a bit of one of those Mexicano discs V-from Taza chocolate in Massachusets(sp?)

    Oh & finished it by steaming a cinnamon stick on top. The chipotle kind of started after the swallow & rolled forward in a fairly mild wave-really nice, imho. Gotta remember this recipe!
